Lobster pieces and Thai rice noodles stir-fried with our spicy house made sauce, bean sprouts and cashew nuts wrapped in pancake.

Ingredients:

Lobster tail (meat only cut into thick slices)
Rice noodles (rehydrated in warm water)
Yellow tofu (small dice)
Shallot (diced)
Sweet pickled turnip
Cashew nuts (fried)
Kow choy (batons)
Egg (raw)
Egg pancake (optional)
Pad Thai sauce (fish sauce, tamarind, tomato paste, palm sugar, salt, chilli, lemon juice, rice vinegar)

Method
• Quickly blanch the lobster (this will stop it sticking to the wok)
• In the hot wok add a little oil (rapeseed) add the shallot, tofu and lobster quickly cook.
• Add the noodles then the raw egg.
• Add the turnip, kow choy and bean sprouts.
• Add the sauce and mix
• Add the cashews
• On a plate lay out your pancake and pour the pad thai into the centre.
• Wrap the pancake, cut in half and serve.
